Suji Pitha


Ingredients:

Bombay Rawa Suji (Suji ) -250 gm
Shredded coconut(Nadia kora)- one coconut
Sugar(Chini) -100gm
Cardamom(Chhota Aleicha)- 6 pcs, powdered
Refined Oil for frying- As per requirement to fry
Salt – as per taste
Black Pepper Powder-1/2 tea spoon



Preparation :

1st step: Stuffing


Put the frying pan on gas, add little (1/2 cup) water, add the shredded coconut, Sugar. Roast it till golden brown.
Add cardamom powder and then roast it for 10-15 minutes and then keep these aside. so the stuffing(pura) is ready.

 2nd Step: Rawa Dough

Take water (double the amount of rawa) in a deep pan. Add 2 tea spoon of oil, this will help in creating a better texture.
 Add, sugar 100 grams and salt as per the taste. Boil it.
When it starts boiling put small amount of rawa and stir it. Stir it continuously other wise it will form lumps.
Once the suji has made a uniform texture like a dough,remove from flame and keep aside.
Wait till the dough cools down to room temperature, kneed the dough with little oil to make it soft.

 

 

Final Step: Make stuffed balls and deep fry

Make small balls from the above dough, rollout each ball into small round shape with the help of your palm and put 1 spoon of coconut stuff created above.
with help of your palms, make a oval shape, meke sure there is no space left open, where coconut stuff can come out.

Heat oil in a frying pan and deep fry the above oval balls in a medium flame till it turns golden brown from each side.


once golden brown, take it out with help of chhanni(chankuni), let it cool.

Suji pitha is ready to serve.



usually made in specific festivals like Raja and Dusshera. these are mouth watering and the yummy taste deserves all the effort!!
